The perfect maple glazed Christmas ham
Start off the holiday season with a perfect maple glazed and smoked ham.

Ingredients:
- approximately 30 cloves
- 4 oranges (3 for garnish)
- smoked ham (or smoke it yourself at 250F/121C until 150F/65C internal temp)
Glaze
- 3/4 cup maple syrup
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 3 tbsp Dijon mustard
- 3/4 tsp fresh ground cinnamon
- 1 tsp all spice
- kale (garnish)
- juice of 1 orange
Method:
- remove rind (run a petty knife around the bone handle, and down each side of the ham, then peel the skin back and remove
- lightly cut diamonds across the fat cap now exposed under the skin
- insert a close at each cross section of the slices (like in the picture below)
- mix glaze ingredients in a small sauce pan over low heat until the sugar has melted
- place the ham on a roasting rack which is placed on a roasting pan (flattest side up so its level)
- squeeze the juice of one orange over the ham and place the orange skin in the roasting pan
- place in BBQ, oven or smoker at 320F/160C for 2 hours whilst basting every 20 mins with the glaze solution. * pro tip * mop up glaze that drips into the roasting pan and brush back over ham
- if sections start to caramelize or burn faster than other sections, place a small piece of alfoil over the effected area
- once the skin on the bone handle is very dark brown, and the glaze on the remainder is a rich dark brown you are ready to remove from your cooker
- rest for 20 mins
- during this time baste every 2-3 mins to obtain a glossy and thick glaze over your ham
- then glam up your ham with kale, sliced oranges and whatever tickles your fancy.
