Instead of fermenting them for 5-7 days, we are using acid to expedite the process and have crunchy and tangy pickles/gherkins within 24 hours.

Ingredients
4-8 Zukes cucumbers, sliced with flower end removed
250ml red creaming soda
250ml apple cider vinegar or white vinegar
½ teaspoon liquid smoke (optional)
1 sprig of fresh dill
1 tablespoon salt
¼ onion sliced
1 tablespoon pickling spices which contains (cinnamon, allspice, mustard seed, coriander, bay leaves, ginger, chillies, cloves, black pepper, mace & cardamom)
1 teaspoon chilli flakes
Directions
Place a pot on medium heat and add salt, vinegar, red creaming soda, liquid smoke and chillies. Once the liquid starts to bubble, stir until salt has dissolved.
Remove the pot from heat and allow to cool
Cut the flower end of your cucumbers and slice lengthways
With a sealable mason jar, add pickling spice, dill, cucumbers and onion, Then pour cooled pickling solution until covered
Bang the jar into the fridge for 24 hours to allow full penetration of flavour.
- Once ready, serve the pickles as a refreshing side dish.
