This knife is the definition of BFYB (Bang For Your Buck) with the Japanese craftsmanship to back it up.

The smaller 150mm blade length is perfect for those with little real estate for your knife.

What can it be utilised for:

This Santoku is great for general food prep with vegetables and smaller cuts of meat. Some great examples would be chopping garlic, carrot, cucumber, herbs and dicing tenderloins.

Benefits:

A perfect entry point into the world of high carbon Japanese knives. The value driven price point allows you to experience the magic of Japanese knives without breaking the bank.

Why a Japanese knife:

Japanese craftsmen have been making steel based blades for centuries and this artesian skill has built them an undeniable reputation for making some of the best knives available. In addition, the lighter construction compared to a traditional Western-style knife allows for less fatigue when slicing up a metric tonne of onions!

A true Japanese made and crafted knife.

History and info

BLUE STEEL - HIGH CARBON HRC 61

Blue Steel is a traditional, high-carbon steel. It is the favourite steel of many knife makers and chefs across the world for it’s fantastic edge holding ability, toughness, and general ease of sharpening. Due to not have stainless steel features, the high carbon steel will develop a patina and develop rust spots if left wet after use. It requires a little more care and maintenance than something like VG-10 Stainless Steel) found in our Suncraft range, so consider this when purchasing a Blue Steel knife as your first Japanese knife.

HRC (ROCKWELL SCALE)

The HRC is a hardness scale based on the hardness of a material. Typically HRC of 60+ is seen to be a quality hard steel that retains its edge over a prolonged time.

ORIGIN OF FUKAMIZU KNIVES

Fukamizu is made in a small factory in Kagoshima, Japan. Fukamizu knives represent excellent value for money whilst using traditional high-carbon Japanese steels. The company was founded by Koji Fukamizu in 1915, in Makurazaki City at the western tip of Honshu and carry on making kitchen knives to this day.

Today Kiyohide Fukamizu and son Takao oversee one of Kyushu’s largest and best-resourced producers of fine knives and edge tools.
