charcoal cooked mushroom sauce
The mushroom sauce has to be one of the crowd favourites, and this is no exception.
AUSSIEQBBQ VIDEO ON THIS COOK:
* this will serve enough sauce for four steaks
Ingredients:
- 8x mushrooms
- 1/2 cup finely grated parmesan cheese
- 1 cup of cooking cream or Crème Fraîche
- 50gm unsalted butter
- 1x clove of garlic crushed
- 2x tbsp Worcestershire sauce
- 1/2 cup dry white wine
- 1/2 cup chicken or vegetable stock
- small handful chopped parsley
Method:
- in a saucepan over a medium heat, throw in the butter and garlic
- once the garlic starts to turn brown, pop in the white wine to de glaze the pan and loosen up all the little bits of crispy garlic
- then add the remainder of the ingredients except the cream and parsley
- cook until sauce starts to thicken
- now reduce the heat to low and add cream and parsley
- cook for a further 2 minutes
Serve with your favourite protein or on a piece of crusty sourdough!
