Nanna’s Deviled Eggs with Crispy Bacon & Pickled Cabbage
These aren’t your average picnic deviled eggs — they’ve been through the Aussie barbecue school of hard knocks and come out with a bit more grunt. This recipe goes way back to my Nana, who was a firm believer that mayonnaise should be homemade, bacon should be properly crispy, and nobody leaves the table hungry.
The filling is creamy, tangy, and just the right amount of punchy — the kind that makes you go back for “just one more” (five times). The crispy bacon on top? That’s not optional. It’s a salty crunch that turns these little bites into crowd favourites. And then there’s the pickled cabbage — yeah, I know it sounds fancy, but trust me, it cuts through the richness like a lawnmower through overgrown grass. Adds colour too, which Nanna would say is “good for the eyes.”
These deviled eggs are a barbecue side dish with main character energy. Easy to prep ahead, hard to keep on the platter. Serve them cold, keep the beer flowing, and prepare for the compliments (and maybe a marriage proposal or two).

Ingredients

7 eggs hard boiled, peeled, sliced in half, then yolks separated from whites and mashed

2 small dill pickles finely diced

¼ cup diced homemade bacon

1 tsp dijon mustard

1.5 tbsp curry powder
-
splash of Maggi original
-
2 pinched of smoked paprika
-
1 tbsp of HealthIER seasoning
Directions
hard boil your eggs using an egg timer, or approx 12 mins at boiling temp
after hard boiling your eggs and mashing the yolks separately, add all ingredients into a bowl (minus bacon) and mix until smooth and fully incorporated
finely dice your bacon
fry off your bacon until super crispy
using either a piping bag or a zip lock bag with the corner cut off, pipe egg mixture into egg white halves.
then top with crispy bacon and pickled cabbage
